A delightful twist on classic pancakes, these Fluffy Brown Sugar Banana Pancakes combine the natural sweetness of ripe bananas with the rich flavor of brown sugar.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 large ripe banana, mashed
  • 1 large egg
  • 2 tablespoons melted butter (or oil)

Instructions

  1. In a large mixing bowl, combine the flour, brown sugar, baking powder, and salt. Whisk together until evenly mixed.
  2. In another bowl, mix the milk, mashed banana, egg, and melted butter. Stir until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; small lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface.
  6. Gently flip the pancakes and cook for another 2 minutes until golden brown on both sides.
  7. Remove from the skillet and keep warm while cooking the remaining batter. Serve stacked with your favorite toppings.

Notes

For extra flavor, consider adding vanilla extract or a pinch of cinnamon to the batter.
