These Easy Pecan Pie Bars combine a buttery, crunchy crust with a rich, caramel-like filling studded with toasted pecans, making them a delightful treat for any occasion.

  • 2 cups all-purpose flour
  • ½ cup light brown sugar
  • ¼ tsp salt
  • ¾ cup cold butter ( sticks), grated
  • ½ tsp cinnamon
  • ¾ cup light brown sugar for filling
  • ½ cup maple syrup
  • ¾ cup butter ( sticks)
  • ¼ cup heavy cream
  • ¼ tsp salt
  • 1 tbsp bourbon (optional)
  • 1 tsp vanilla extract
  • 3½ cups chopped pecans

Instructions

  1. Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper and coat with nonstick spray.
  2. Combine 2 cups all-purpose flour, ½ cup light brown sugar, ½ tsp cinnamon, and ¼ tsp salt in a bowl.
  3. Grate ¾ cup cold butter into dry ingredients and rub until it resembles coarse crumbs.
  4. Press the crumb mixture into the bottom of the prepared pan and bake for 20 minutes until edges are golden.
  5. In a saucepan, combine ¾ cup light brown sugar, ½ cup maple syrup, ¾ cup butter, ¼ cup heavy cream, ¼ tsp salt, 1 tbsp bourbon, and 1 tsp vanilla extract. Bring to a boil, then simmer for 2 minutes.
  6. Stir in 3½ cups chopped pecans until coated, then pour over pre-baked crust.
  7. Return the pan to the oven and bake for 20 to 25 minutes until bubbling and golden.
  8. Let cool completely in the pan before lifting out and cutting into bars.

Notes

For clean slices, chill briefly before cutting or wipe the knife between cuts. Store in an airtight container for up to 3 days at room temperature or in the refrigerator for up to 1 week.
