These cookies combine the cozy warmth of cinnamon rolls with a satisfying crunchy cookie texture, featuring buttery cinnamon filling and a sweet glaze.

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Gradually add in flour, baking powder, and ground cinnamon, mixing until just combined.
  4. Turn the dough out onto a floured surface and roll it into a rectangular shape about ¼ inch thick.
  5. In a separate small bowl, mix together the softened butter, brown sugar, and additional ground cinnamon, then spread this mixture evenly over the rolled-out dough.
  6. Roll the dough tightly to form a log, then slice it into ½ inch thick rounds and place them on the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Let them cool before transferring to a cooling rack.

Notes

Store leftover cookies in an airtight container for up to 5 days. You can also freeze them for up to 3 months.
