Crockpot Chicken and Stuffing Casserole

A comforting, one-pot meal with tender chicken, savory stuffing, and creamy sauce, perfect for busy weeknights.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 (6 oz) box chicken stuffing mix
  • 1 bag frozen mixed vegetables (1216 oz)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 1/2 tsp Kinder’s Buttery Garlic & Herb seasoning
  • 2 cups chicken broth, divided
  • 1/2 tsp black pepper

Instructions

  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
  2. Combine the cream of chicken soup, sour cream, 1 cup chicken broth, and seasoning in a mixing bowl; whisk until smooth.
  3. Pour the mixture over the chicken, covering the tops.
  4. Add the frozen mixed vegetables on top without thawing.
  5. Sprinkle the chicken stuffing mix evenly over the veggies.
  6. Pour the remaining chicken broth over the stuffing mix.
  7. Cover and cook on low for 6 to 8 hours or on high for 4 hours.
  8. Sprinkle the shredded cheddar cheese on top about 30 minutes before serving.
  9. Serve and enjoy with a large spoon to scoop through the layers.

Notes

For a browner top, transfer to the broiler for a few minutes. This casserole is great for meal prep.
