A cozy and comforting vegetable rice casserole topped with melting cheddar cheese and crispy Ritz crackers.

Ingredients

  • 1 cup uncooked white rice
  • 2 cups vegetable broth
  • 2 cups mixed vegetables (broccoli, carrots, peas)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to package instructions using vegetable broth.
  3. In a large mixing bowl, combine the cooked rice, mixed vegetables, cream of mushroom soup, and half the cheddar cheese.
  4. Season the mixture with salt and pepper, stirring until well combined.
  5. Pour the mixture into a greased baking dish, spreading it evenly.
  6. Sprinkle the remaining cheddar cheese on top, followed by the crushed Ritz crackers.
  7. Bake for 25-30 minutes until the cheese is bubbly and the crackers are golden brown.
  8. Let cool slightly before serving.
