A hearty bowl of Irish Beef Stew perfect for cold winter nights, featuring tender beef, savory vegetables, and a comforting blend of flavors.

  • 2 pounds beef chuck
  • 4 medium carrots, diced
  • 4 large potatoes, cubed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck and cut it into 1.5-inch cubes. Peel and chop the vegetables.
  2. In a large pot, heat a tablespoon of oil over medium-high heat. Add the beef cubes in batches and sear until browned on all sides, about 5–7 minutes.
  3. Add the chopped onions and garlic to the pot and cook for 2-3 minutes until fragrant.
  4. Add the browned beef back to the pot along with the carrots, potatoes, tomato paste, Worcestershire sauce, thyme, and beef broth. Ensure the broth covers the ingredients.
  5. Bring the mixture to a gentle simmer, reduce heat, cover, and cook for 1.5–2 hours on the stove or 4–6 hours on high/6–8 hours on low in a slow cooker.
  6. Taste before serving and add salt and pepper as needed. For a thicker stew, mash a couple of potato chunks and stir them back in.
  7. Ladle the stew into bowls and serve alongside crusty bread or creamy mashed potatoes.

Enhance flavor by browning the meat; consider adding fresh herbs for garnish before serving.
