Cowboy Butter Chicken Pasta

A comforting dish of pasta cooked with juicy chicken in a rich, buttery sauce infused with herbs and spices.

Ingredients

  • 1 lb chicken breast, cubed
  • 8 oz pasta of choice (penne, fusilli, etc.)
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp lemon juice
  • Seasonings (salt, pepper, Italian seasoning)

Instructions

  1. Boil water in a large pot, add salt, then pasta. Cook until al dente, drain and set aside.
  2. In a large skillet, melt butter over medium heat and add garlic. Cook until fragrant, about 30 seconds.
  3. Add chicken to the skillet, season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until golden brown.
  4. Pour in chicken broth, cooking for an additional 2-3 minutes until thickened slightly.
  5. Lower heat and stir in heavy cream and lemon juice, simmer for 2 more minutes.
  6. Add cooked pasta to the skillet, tossing gently to coat. Adjust with reserved pasta water if needed.
  7. Remove from heat, stir in parsley, and serve immediately.

Notes

Freezable for up to 3 months. When reheating, add a splash of water or cream to restore creaminess.
