  • 2 ripe bananas
  • 1/2 cup melted butter (or coconut oil for dairy-free)
  • 1 cup brown sugar (or coconut sugar)
  • 1 teaspoon vanilla extract
  • 2 eggs (or flaxseed eggs for vegan version)
  • 1 ½ cups flour (regular, whole wheat, or almond flour for gluten-free)
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash 2 ripe bananas in a mixing bowl until smooth.
  3. Add 1/2 cup melted butter, 1 cup brown sugar, and 1 teaspoon vanilla extract to the mashed bananas and stir until combined.
  4. Beat in 2 eggs one at a time; mix until smooth.
  5. In a separate bowl, mix 1 ½ cups of flour and 1 teaspoon of baking powder, then fold into the wet mixture until just combined.
  6. Pour the batter into a greased 9×9 inch baking dish and smooth the top.
  7. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
