Deliciously warm and inviting Coffee Cake Muffins with a crumbly streusel topping, perfect for breakfast or an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar (for streusel topping)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, combine flour, baking powder, and ground cinnamon.
  3. In another bowl, cream together butter and granulated sugar until fluffy.
  4. Add eggs, milk, and vanilla to the butter mixture; mix until combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. For the streusel, mix brown sugar, chopped nuts (if using), and flour; add melted butter until it resembles wet sand.
  7. Fill muffin cups halfway with batter, add streusel on top, then fill to just under the rim and top with more streusel.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

These muffins can also be made in a slow cooker or air fryer for different flavor experiences.
