Delicious cookies reminiscent of coffee cake, soft and chewy with a cinnamon crumb topping.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).
  3. Add the eggs one by one, mixing well after each addition. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and optional nuts.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden and the tops are set.
  8. Remove from the oven and let them rest on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Perfect with coffee or tea; can be stored in an airtight container for up to a week.
