Cinnamon Roll Cookies are a delightful treat that capture the essence of warm and gooey cinnamon rolls in a cookie format, perfect for any occasion.

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well blended.
  3. In another bowl, cream the softened butter with the granulated sugar and packed brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth and well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Prepare the filling by combining the packed brown sugar and ground cinnamon in a small bowl.
  7. Place half of the cookie dough onto a sheet of parchment paper and spread it into a rectangle.
  8. Sprinkle the filling mixture evenly over the dough and carefully roll it up tightly.
  9. Slice the rolled dough into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes or until golden brown. Allow to cool slightly before serving.

Notes

For uniform cookies, use a sharp knife to slice the rolled dough. Store cookies in an airtight container for up to 5 days.
