A delightful sandwich combining tender chicken, creamy avocado, and melty cheese on toasty bread.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado
  • 4 slices of cheese (cheddar or mozzarella)
  • 4 slices of your favorite bread (sourdough or whole grain)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional add-ins: Fresh spinach, tomatoes, or spicy aioli

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Remove and let rest before slicing.
  2. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash gently, season with salt and pepper, and set aside.
  3. On one slice of bread, spread a generous layer of mashed avocado. Add sliced chicken and top with two slices of cheese.
  4. Place a second slice of bread on top and return to the skillet. Toast for 2-3 minutes per side until bread is golden brown and cheese melts.
  5. Cut the sandwich in half and enjoy while warm.
