Warm, cheesy, and unapologetically comforting, this casserole combines golden hashbrowns with a savory beef mixture and tangy sour cream for a satisfying dish.

Ingredients

  • 1 lb ground beef
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 lb frozen hashbrowns
  • 1 can Rotel (diced tomatoes with green chilies)
  • 1 can cheddar cheese soup
  • 1/2 cup sour cream
  • 1 packet taco seasoning

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef, breaking it up as it cooks.
  3. Drain excess fat from the skillet. Stir in onion powder, garlic powder, cumin, and salt and pepper to taste. Cook for another minute.
  4. In a large bowl, combine the seasoned beef with the hashbrowns, Rotel, cheddar cheese soup, sour cream, and taco seasoning. Mix until well combined.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 30 to 35 minutes until heated through and slightly golden.
  7. Let cool for 5 minutes before serving.

Notes

For easier cutting and serving, let the casserole rest the full 5 minutes. Adjust salt and pepper to taste after mixing.
