These Cheesy Ground Beef Enchiladas are a flavorful and comforting dish, filled with savory ground beef and melted cheese, all enveloped in soft tortillas and topped with a zesty sauce.

  • 1 lb ground beef
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups enchilada sauce
  • 10 corn or flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Optional toppings: Sour cream, diced tomatoes, fresh cilantro, or avocados

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the diced onions and minced garlic until fragrant, about 3-4 minutes. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess grease.
  3. Stir 1 cup of enchilada sauce into the beef mixture and simmer for 2-3 minutes.
  4. Warm the tortillas in the microwave for 30 seconds.
  5. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them tightly and place seam-side down in a greased baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and top with remaining cheese.
  7. Cover with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.

Notes

For a spicier version, add diced jalapeños or chili powder to the beef mixture. These enchiladas can be prepared ahead of time and baked 24 hours later.
