Ingredients

Scale
  • 2 cups crushed graham crackers
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the crushed graham crackers, sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan to form the crust.
  3. In another bowl, mix the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time to the cream cheese mixture, mixing well after each addition until fully incorporated.
  5. Gently fold in the diced apples and ground cinnamon into the cream cheese mixture.
  6. Pour the cheesecake mixture over the crust and spread it evenly across the surface.
  7. Drizzle the caramel sauce over the top and use a knife to swirl it through the cheesecake mixture.
  8. Bake for 30-35 minutes, checking until the edges are set and the center is still slightly jiggly.
  9. Allow to cool completely in the pan, then refrigerate for at least 2 hours before slicing into bars.

Notes

For a more pronounced apple flavor, use a mix of tart and sweet apples. Store leftovers in the refrigerator for up to 5 days.
