These Buttery Brown Sugar Cinnamon Cookies bake up soft, tender, and warmly spiced, with a crisp edge and a melt-in-your-mouth center.

  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • Optional: coarse sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2 to 3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until smooth.
  4. Whisk together the flour, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Combine the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Portion tablespoon-sized portions of dough, roll each into a ball, and optionally roll in coarse sugar.
  7. Arrange the dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 9 to 11 minutes, until the edges are set and the centers look slightly underbaked.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature butter and eggs for the smoothest, most even dough. Store cooled cookies in an airtight container at room temperature for up to 4 days.
