Soft and chewy Butter Pecan Cookies with a rich buttery base and crunchy toasted pecans, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, toasted and chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the chopped pecans on a baking sheet and roast for 5-7 minutes until fragrant.
  3. In a bowl, cream butter with granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients.
  6. Fold in the toasted pecans gently.
  7. Drop rounded tablespoons onto ungreased baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden, centers slightly soft. Cool on sheets for 5 minutes before transferring to wire racks.

Notes

Store cookies in an airtight container to keep them fresh for up to a week. You can also freeze them for longer storage.
