  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon (for the dough)
  • ¼ cup sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. In a small bowl, combine the ¼ cup sugar and 2 teaspoons cinnamon.
  7. Scoop tablespoon-sized portions of dough, roll them into balls, and coat each in the cinnamon-sugar mixture.
  8. Place on ungreased baking sheets, leaving space for spreading. Bake for 10-12 minutes until golden brown.
