Delightful warm cornbread with a golden, fluffy texture, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 cup butter (1 stick)
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1 & 1/4 cups buttermilk

Instructions

  1. Preheat your oven to 375°F (190°C) and place a 9-inch cast iron skillet inside to heat.
  2. In a small bowl, whisk together the all-purpose flour, cornmeal, kosher salt, baking soda, and baking powder. Set this mixture aside.
  3. In a large bowl, melt the butter and stir in the vegetable oil, granulated sugar, and honey until well combined.
  4. Add the eggs and buttermilk to the butter mixture, whisking until everything is blended smoothly.
  5. Gently fold the dry mixture into the wet ingredients, mixing just until combined.
  6. Reserve 1/2 tablespoon of the melted butter for greasing the skillet, then pour the cornbread batter into the heated skillet.
  7. Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cornbread to cool for 5-10 minutes in the skillet before slicing and serving.

Notes

Make sure to let the skillet heat before adding the batter for a crispy edge.
