  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks (1 cup) salted butter
  • 1/2 cup cocoa powder
  • 1 cup black coffee or water
  • 1/2 cup buttermilk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 sticks (3/4 cup) salted butter (for icing)
  • 1/2 cup milk (for icing)
  • Dash of salt (for icing)
  • 1 teaspoon vanilla extract (for icing)
  • 1 box (1 lb) powdered sugar
  • 1/2 cup cocoa powder (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10×15 baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  3. In a saucepan over medium heat, melt the butter. Stir in the cocoa powder and coffee or water, and bring the mixture to a boil. Remove from heat.
  4. In another bowl, mix together the buttermilk, eggs, and vanilla extract until well combined.
  5. Combine the hot cocoa mixture with the flour mixture, mixing until smooth. Fold in the buttermilk mixture until fully incorporated.
  6. Pour the batter into the prepared pan and bake for 20-22 minutes, or until a toothpick inserted comes out clean.
  7. For the icing, sift together the powdered sugar and cocoa powder in a large bowl.
  8. In a saucepan, combine the butter, milk, and a dash of salt. Heat until it simmers, then stir in the vanilla.
  9. Pour the hot butter mixture into the sifted sugar and cocoa, whisking until smooth.
  10. Allow the icing to sit for a few minutes to thicken, then pour it over the warm cake.

For a lighter texture, ensure that all ingredients are at room temperature before mixing. Store leftovers in an airtight container.
