A comforting casserole filled with savory beef, tender vegetables, and creamy mushroom soup topped with melted cheddar cheese.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup frozen peas
  • 2 cups cooked egg noodles
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a casserole dish.
  2. Add the ground beef and chopped onion to a skillet over medium heat. Brown together, stirring occasionally.
  3. Drain the excess fat from the skillet.
  4. Return the skillet to the stove and add the sliced carrots, sliced celery, and frozen peas. Cook for an additional 5 minutes.
  5. Combine the cooked beef and vegetable mixture with the cooked egg noodles and cream of mushroom soup in a large bowl. Season with salt and pepper, and mix gently.
  6. Pour the mixture into the greased casserole dish and spread evenly. Sprinkle cheddar cheese over the top.
  7. Bake for 25 to 30 minutes, until cheese is bubbly and golden.
  8. Remove from oven and let rest for a few minutes before serving hot.

Notes

Let the casserole rest for 5 minutes after baking for cleaner serving.
